Dialysis diet snacks for Super Bowl® XLII

Will the New England Patriots cap off their record-breaking, undefeated season with a Super Bowl® win? Or will Eli be the second Manning in a row to lead his team (the New York Giants) to a Super Bowl victory? While football fans will be glued to the game, and some fans focused on the commercials, all fans will want to enjoy some tasty snacks. Your at-home tailgate party can include dialysis-friendly recipes that will have guests cheering.

These pigskin-favorite recipes are high in protein, but low in phosphorus, potassium and sodium so people on dialysis can enjoy the party foods and stay healthy.For people with chronic kidney disease who are not on dialysis and need to limit their protein intake, they can choose a few of the meatball or wing recipes along with some lower-protein appetizers, such as Spicy Crunch and Munch Mix, Raw Veggies and Dip, Festive Pineapple Cheese Ball and Cranberry Dip with Fresh Fruit from the DaVita.com Recipe section.

In addition to kidney-friendly foods, beverages that are kidney friendly include: 7UP®, ginger ale, Sprite® or Barq’s® root beer. Coffee and tea are also good choices. Avoid beer, however, as it is too high in phosphorus. Plus, remember to take phosphorus binders as prescribed by your doctor when eating.

Super Bowl XLII kicks off at 6:00 p.m. (ET) on FOX but you can tune in earlier for coverage and performances. The National Anthem is scheduled to be sung by hometown girl, Jordan Sparks, winner of television’s American Idol. Be sure to stay tuned for more entertainment during the halftime show featuring American rockers, Tom Petty and the Heartbreakers. Since their debut album in 1976, the band has sold more than 50 million records and won many awards. Tom Petty has received 18 Grammy nominations with the Heartbreakers and for his solo works.

This is the second time the Super Bowl has been played in Arizona. Super Bowl XXX in 1996 was played at Sun Devil Stadium in Tempe.

Both teams have appeared in many Super Bowls over the years. The favored New England Patriots will be appearing in their sixth Super Bowl. Their history includes two losses and three wins. They lost Super Bowl XX in New Orleans, LA against the Chicago Bears 46-10; lost Super Bowl XXXI against Green Bay Packers 35-21 in New Orleans; won Super Bowl XXXVI against the St. Louis Rams 20-17 in New Orleans (Tom Brady won MVP); won Super Bowl XXXVIII against the Carolina Panthers 32-29 in Houston, TX (Tom Brady won MVP) and won XXXIX against Philadelphia 24-21 in Jacksonville, FL.

The New York Giants have seen Super Bowl action three times. They beat the Denver Broncos 39-20 in Pasadena, CA in Super Bowl XXI; squeaked by the Buffalo Bills 20-19 in Super Bowl XXV in Tampa, FL and lost Super Bowl XXXV in Tampa against the Baltimore Ravens 34-7.

Millions of people will watch this year’s Super Bowl. Will the winner be the favored Patriots or underdog Giants? Tune in with your kidney-friendly snacks and find out.
