Ingredients

  • 40 ounces sliced canned peaches
  • nonstick cooking spray
  • 15.25 ounces boxed yellow cake mix (dry mix)
  • 1/2 cup unsalted margarine

Preparation

  1. Preheat oven to 350° F.
  2. Spray cooking spray on the bottom of a 9" x 13" cake pan.
  3. Dump two cans of undrained peaches (or pineapple) into cake pan and spread evenly.
  4. Sprinkle the package of yellow cake mix evenly on top of fruit.
  5. Dot with margarine.
  6. Bake for 30 minutes.

Helpful hints

  • 40 ounces canned fruit is equivalent to 2 cans.You can use pineapple or any of your favorite canned fruit.
  • Top with whipped topping if desired.
  • If you have diabetes, reduce portion if necessary to stay within your carbohydrate goal.
