Tasty Eggplant Casserole by Holly from North Carolina

Since Holly joined the DaVita team of dietitians 2 years ago, she has learned a lot about motivating people. “The most challenging aspect of my job is convincing someone to do something that is for their own good and have them take ownership of their health,” she shares. “At the same time, the most rewarding part of my job is finally getting through to that one person you never thought you could.”

Holly’s career in nutrition began with her interest in how foods affect the body and contribute to overall health. As a native of Rutherfordton, North Carolina, Holly completed her education at Western Carolina University.

Today, Holly says she really enjoys working at her DaVita center in North Carolina because, “It’s a beautiful part of the country and it’s close to the mountains and coastline. Also, the people I work with are not just co-workers, they’re like family.”
