Spicy Green Bean Salad and Rice and Chile Salad by Margaret from Texas

DaVita dietitian, Margaret discovered her career aspirations as a teenager growing up in Arizona. “I became interested in nutrition in my junior high school home economics class,” Margaret explains. “Then, in my ninth grade biology class, we had to do a report on a career that involved biology. I researched ‘registered dietitian’ and from that time on, I had an idea this was the career for me.”

Margaret became a dietitian after completing her education in nutrition at the University of Arizona in Tucson. This year, she happily celebrated her fifth year at DaVita. “I really enjoy the team spirit and working together to help our patients have the best experience and outcomes possible,” she shares. “The most rewarding part of my job is being able to reassure patients and their families that they can go on with a comfortable, enjoyable life—and even occasionally enjoy foods they love.”

While working as a dietitian certainly has its challenges—like motivating patients to keep trying in the face of their health problems—Margaret has found it also comes with some pleasant surprises.

“On one occasion I had received cookbooks to provide to patients. One patient was a middle-aged man who lived alone, so I didn’t know if he would use a cookbook, however, when he came back in over the following weeks, he reported on the recipes he had tried. The cookbook had helped him because he didn’t know what food to prepare or how to prepare it. He thanked me over and over again.”
