Easy Crock Pot Beef Stroganoff by Janice from South Dakota

“Learn to appreciate the art of cooking.” That’s the advice of Janice from South Dakota, a dedicated DaVita dietitian. Janice says that everyone, not just people on dialysis, need to rely less on convenience and fast foods, and more on the practice of home cooking and eating together as a family.

Janice is also quick to add, “I encourage patients to take small steps, one day at a time, while making dietary changes, and to celebrate those new habits. I always try to emphasize the positive and smile. The most rewarding aspect of my job is seeing my patients’ sense of well being improve with proper diet and adequate dialysis.”

Originally from a small farming community in Willow Lake, South Dakota, Janice attended university in the region and says she was encouraged by her sister, also a dietitian, to enter the profession. Devoted to DaVita for 11 years now, she says, “The national network of DaVita dietitians is fantastic.”

In the course of her work, Janice has even learned a few things herself, she relays her story, “I used to travel to a dialysis facility that is about 280 miles from my home center, in a very remote area of our state. One January I had traveled there to work and was starting to drive back home just when a blizzard warning was issued. I got as close as 40 miles from home when the blizzard got too bad to travel. I ended up spending the next two days stranded at a truck stop. But I was just happy to not be stranded out in the blizzard. I learned a valuable lesson, I’ll share with you:  If there is a blizzard warning–don’t travel!”

Stick close to home and try Janice’s recipe for Easy Crock Pot Beef Stroganoff. It’s a hearty, hot meal you can share with family and friends, or freeze the leftovers for convenient, home-cooked “fast” food.
