Dijon Pork Chops by Mary from Minnesota

Who says pork chops have to be boring? Not DaVita dietitian Mary from Minnesota. Mary’s recipe for Dijon Pork Chops has a fancy touch almost everybody will love.

A DaVita dietitian for 18 years, Mary loves meeting interesting people from different cultures and all walks of life. During her school days at the University of Minnesota, Mary found her renal rotation the most challenging part of her studies and decided it was the specialty she wanted to work in.

“The most challenging aspect of my job is caring for patients with multiple medical problems, but there’s a rewarding aspect to it,” Mary says. “When a patient tells me that the information I give them really helps, I feel as though I’m giving them the tools they need to follow their diet and thus enjoy a better quality of life.”  Mary describes her approach with patients as a caring one and she advises that the single most important thing patients can do to improve health is adhere to their dialysis treatment schedule.

When asked what makes her center special, Mary says, “We have a Special Needs Unit with two beds for those patients who are unable to sit up during their dialysis treatment. We also have private rooms for patients who suffer from mental illness and behavior problems, and an isolation room for patients with hepatitis B.”  Finally, Mary adds that her favorite thing about the location is not having to take the freeway to get to work.
