Jollof Rice with Chicken by Victoria from Illinois

Although some dietitians prefer to work independently, Victoria enjoys the DaVita team approach to helping patients medically, nutritionally and mentally. “The majority of our teammates have worked together for close to 20 years. We have a great mix of old and new knowledge to treat the total patient,” says Victoria.

While growing up in Chicago and attending Loyola University, Victoria developed a strong interest in how good nutrition affects people’s health—particularly kidney patients. She has seen the benefits firsthand during her two-and-a-half years with DaVita. “The single most important thing patients can do to improve their health,” advises Victoria, “is to be conscientious about diet choices and the benefits it has on their total health.”

Healthy living is what Victoria’s work is all about. And while it may not always be easy, it certainly is fulfilling. “Renal osteodystrophy management is definitely challenging,” Victoria admits, “but using medical nutrition therapy to help prepare for kidney transplant—that’s rewarding!”

Whether you’re preparing for a kidney transplant, or trying to eat healthier on your renal diet, Victoria has “traveled the globe” to bring you one of West Africa’s best known dishes: Jollof Rice with Chicken—a delicious dish with international appeal.
