South of the Border Meatballs

Serving size: 2 meatballs

Ingredients

  • 3 pounds ground beef
  • 1-1/2 cups onion, chopped
  • 1-1/2 cups green peppers, chopped
  • 4 cups rice, cooked
  • 5 large eggs, beaten
  • 1 tablespoon garlic powder
  • 2 jalapeno peppers, chopped
  • 1 cup taco sauce (choose lowest sodium brand)
  • 1 cup water

Preparation

  1. Preheat oven to 375° F.
  2. Combine ground beef, onion, green pepper, cooked rice, eggs, garlic powder and jalapenos in a large bowl and mix together.
  3. Roll into 1” balls and place on a baking sheet.
  4. Bake for 10 to 15 minutes, until meatballs are cooked through.
  5. Combine taco sauce and water in a saucepan and bring to boil.
  6. Add meatballs to taco sauce and lower temperature to warm.
  7. Serve hot or place in a covered warming dish or slow cooker on low heat setting.
