Deviled Eggs

 

Recipe from "Kidney Kooking" cookbook from the National Kidney Foundation of Georgia.

Serving size: 2 halves 

Ingredients

  • 1 hard-boiled egg
  • 1 teaspoon pimentos
  • 1/4 teaspoon dry mustard
  • 1 tablespoon mayonnaise
  • 1/4 teaspoon pepper
  • paprika (sprinkle)

Preparation  

  1. Cut egg lengthwise and remove yolk.
  2. Mix yolk, pimentos, dry mustard, mayonnaise and pepper.
  3. Place mixture inside egg whites in equal parts.
  4. Sprinkle eggs with paprika.

Our social worker and I made these for our Halloween party last year and they were great. I loved the mustard flavor and the patients enjoyed the high protein snack.

These eggs are delicious! Our Social Worker volunteered to make them last fall for one the parties we had for the patients at our clinic, and they were a big hit. I think they are a lot of work to make for a large group, but they do turn out great. And as a dietitian, I was thrilled that they are another fun, tasty way to eat protein!!
