Deviled Eggs

Recipe from "Kidney Kooking" cookbook from the National Kidney Foundation of Georgia.

Serving size: 2 halves
Ingredients
- 1 hard-boiled egg
- 1 teaspoon pimentos
- 1/4 teaspoon dry mustard
- 1 tablespoon mayonnaise
- 1/4 teaspoon pepper
- paprika (sprinkle)
Preparation
- Cut egg lengthwise and remove yolk.
- Mix yolk, pimentos, dry mustard, mayonnaise and pepper.
- Place mixture inside egg whites in equal parts
- Sprinkle eggs with paprika.

I think they are a lot of work to make for a large group, but they do turn out great. And as a dietitian, I was thrilled that they are another fun, tasty way to eat protein!!
