Fiesta Roll-Ups

Ingredients
- one 4-ounce can chopped green chilies
- 1/2 teaspoon garlic powder
- 1/2 teaspoon cumin
- 1/2 teaspoon chili powder (more if desired)
- 4 tablespoons green onion, thinly sliced
- one 8-ounce package cream cheese, softened
- six 8” flour tortillas
Preparation
- Combine green chilies, spices and green onions in a bowl.
- Blend in softened cream cheese.
- Spread a thin layer of cream cheese mixture on each tortilla, leaving
1/4” edge uncovered.
- Roll tortillas up like a jelly roll. Use toothpick to secure rolls.
- Cover and refrigerate for at least one hour.
- Slice rolls into 1” pieces and serve as a snack or appetizer.

1 reviews | Avg. User Rating:I made the Fiesta Rollups for a recent Beach party in our dialysis unit (I am the dietitian). The first time I made them I followed the recipe but found the cumin and chili powder to be overpowering. The second time I replaced the cumin and chili powder with Spanish Smoked Paprika which added a delicious smoked flavor and a nice orange color to the filling. Also, instead of chopping up the scallion and adding to the filling, I placed one stalk of scallion on the edge of each tortilla before rolling it up...when they are sliced it makes a nice spot of green color in the middle of the pinwheels. These were popular with our dialysis patients.
