Chorizo and Egg Tortilla

Portions:   1

Serving size:  1/3 cup meat with one egg

Ingredients

  • 1/3 cup Chorizo from Easy Chorizo recipe on DaVita.com
  • 1 egg or 1/4-cup low-cholesterol egg product
  • one 6” flour tortilla

Preparation

  1. Cook 1/3-cup portion Easy Chorizo in a skillet on stove top, chopping meat into fine crumbles with a spatula. 
  2. Drain excess fat and water, if needed. Once meat is thoroughly cooked, add 1 egg or 1/4-cup cholesterol-free egg product, stirring to combine as eggs are cooking.
  3. Serve in a flour tortilla.
