Denver Omelet

Ingredients

  • 1 teaspoon canola oil
  • 1/4 cup bell pepper, diced
  • 1/4 cup onion, diced
  • 1/2 ounce ham, diced
  • 1 egg + 1 egg white
  • 1/2 ounce extra-sharp cheddar cheese, shredded

Preparation

  1. Heat oil in a skillet over medium heat. Add diced pepper, onion and ham. Sauté for 2 minutes.
  2. Beat egg and egg white.
  3. Pour egg mixture into skillet.
  4. Cook until the omelet firms up and then loosen both sides of the omelet with a spatula. Roll it over onto a serving plate and sprinkle cheese on top.
