Bev's Raw Apple Cake

2-1/4" x 2-1/2"

Ingredients Cake
  • non-stick cooking spray
  • 2 eggs
  • 3/4 cup oil
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 4 cups raw apples, peeled and chopped
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 2 teaspoons baking soda
  • 1 cup chopped pecans

Ice Cream

  • 1 8-ounce package cream cheese, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla
Preparation
  1. Preheat oven to 350 degrees F. Spray 9" x 13" baking pan with non-stick cooking spray.
  2. Mix together: eggs, oil, sugar and vanilla. Then stir in apples.
  3. In a separate bowl, stir together: flour, cinnamon, baking soda and pecans.
  4. Add dry mixture to apple mixture and mix together.
  5. Put into baking pan and bake in oven for one hour.
  6. Allow to cool.
  7. For icing: Using a mixer, mix together cream cheese, powdered sugar and vanilla.
  8. Spread icing over cool cake.

I think the sugar for the ice cream is also too much

Hi, I find that the sugar in the recipe is excessive. I have not tried it yet but 2 cups of sugar to 2 cups of flour in any recipe is really excessive. I would normally use in a recipe like that a quarter cup of sugar . The natural sweetness of the apples which would increase after cooking and cinnamon would add to the sweet flavour as well.
