Apple Tostada

Serving size: one tortilla with 1cup fruit mixture
Ingredients
- two 6” to 7” flour tortillas
- butter-flavor or regular nonstick cooking spray
- 1 teaspoon granulated sugar
- 1/8 teaspoon pumpkin pie spice
- 2 apples or pears, peeled, cored and sliced
- 1 tablespoon brown sugar
- 1/2 teaspoon pumpkin pie spice
- one 5-1/2-ounce can apple juice
- 1 tablespoon dried currants
- sifted powdered sugar (optional)
Preparation
- Preheat oven to 400° F.
- Place tortillas on a baking sheet and lightly coat tortillas with nonstick cooking spray.
- In a small bowl, stir together granulated sugar and 1/8 teaspoon pumpkin pie spice. Sprinkle over tortillas. Bake for about 10 minutes or until crisp.
- Cool completely on a wire rack.
- Lightly coat a medium, nonstick skillet with cooking spray and preheat over medium heat. Add apples or pears, brown sugar and 1/2 teaspoon pumpkin pie spice; cook and stir about 10 minutes or until golden.
- Add apple juice and currants. Continue cooking, stirring occasionally, about 20 minutes or until the apples caramelize and the liquid evaporates.
- Spoon apple mixture over tortillas. If desired, sprinkle with powdered sugar.
- Serve immediately.

Helpful Hints
- If you have diabetes, reduce portion to 1/2 tortilla with 1/2 cup of the fruit mixture. A whole portion contains too much carbohydrate, and may cause blood glucose to increase too much.
- If sugar substitute is used instead of sugar, fruit will not caramelize as much and consistency may be runny.
