Cherry Sweetheart Dessert

Serving size: 1/8 of pie

Ingredients

  • 1 package diet cherry gelatin
  • 9” pie crust (can be homemade or store bought)
  • 8 ounces light cream cheese, room temperature
  • 12 ounces light whipped topping
  • 1 can light cherry pie filling

Preparation

  1. Prepare the diet cherry gelatin according to cooking instructions on the box and pour into an 8” x 8” pan and place in refrigerator to set.
  2. Bake the pie crust and let cool.
  3. Beat softened cream cheese until smooth and then fold in the whipped topping.
  4. Cut set gelatin into cubes and fold into the whipped topping mixture. Pour into baked pie crust.
  5. Spoon cherry filling evenly over the gelatin mixture.
  6. Refrigerate for 2 to 3 hours before serving to your sweeties.

Helpful Hints

  • Prepare gelatin first, bake pie crust second and then take cream cheese out of refrigerator to soften.
  • Take whipped topping out of freezer for about an hour before folding into cream cheese.
