Mandarin Orange Jell-O® Pie

Portions:   8 
Serving size:  1/8 of pie

Ingredients

  • 3/4 cup boiling water
  • one 4-serving package orange sugar-free Jell-O® (or any diet orange gelatin)
  • 1 cup cold water or diet ginger ale
  • one 11-ounce can mandarin oranges in light syrup or own juiced, drained
  • 14 graham crackers (2-1/2” x 5” pieces)
  • 2 tablespoons margarine, melted
  • 1/4 cup Splenda® granular sugar substitute
  • 1/2 cup thawed Cool Whip® topping

Preparation

  1. Preheat oven to 350° F.
  2. Boil water for filling. Add Jell-O® and stir until completely dissolved.
  3. Stir in cold water or diet ginger ale.
  4. Refrigerate filling until partially set and then add mandarin oranges. While gelatin is setting, make crust.
  5. Crush graham crackers.
  6. Stir in melted margarine and Splenda®.
  7. Pat into a 9" pie pan and bake for 10 minutes.
  8. Let crust cool.
  9. While crust is cooling, add Cool Whip to gelatin mixture.
  10. Spoon gelatin mixture into crust and refrigerate for at least 2 hours or until completely set.
  11. Keep refrigerated until ready to eat, then cut into 8 pieces and serve.

Helpful Hints

  • When preparing the pie filling, use cold water or diet ginger ale, but not juice.
  • For variety try different gelatin flavors along with fruit that is low in potassium.
