Cream Cheese Filled Peaches with Gelatin

Portions:  12

Serving size: 1 peach half with 1/3 cup gelatin

Ingredients

  • two 14-ounce cans peach halves in light syrup, drained 
  • one 8-ounce bar low-fat cream cheese
  • one large box sugar-free cherry gelatin

Preparation

  1. Drain peaches in a strainer for 15 to 20 minutes.
  2. Place in a 9” x 13” pan with pit-sides of peaches facing up.
  3. Cut cream cheese bar into 12 equal servings and place into the pit-hollow of each peach.
  4. Prepare gelatin per package instructions and then pour over peaches.
  5. Cover and refrigerate for at least 3 hours before serving.
