Low Fat Heavenly Fruit Hash

Servings  6 portions
Serving size  1/2 cup
Ingredients
  • one 6-ounce package of light cream cheese, softened
  • one 8-ounce can of crushed pineapple in juice
  • one 8-ounce can of maraschino cherries, drained and cut into small pieces
  • 1 cup of miniature marshmallows
  • 1 tablespoon coconut for topping (optional) 
Preparation
  1. Mash light cream cheese using a wooden spoon. Add crushed pineapple with juice and drained cherries*.  Stir to mix well. 
  2. Gently fold in marshmallows. Top with coconut, if desired. 
  3. Chill until ready to serve, or overnight.
