Apple Cinnamon Farfel Kugel

| Ingredients |
- 1 cup hot water
- 1 cup Matzo farfel (available in the Passover-product aisle in your supermarket)
- 1/4 cup sugar
- 2 large apples peeled, cored and shredded
- 2 teaspoons ground cinnamon
- 3 egg whites, stiffly beaten
- 1/2 cup pineapple chunks, drained

| Preparation |
- Preheat oven to 375° F.
- Spray an 8" x 8" baking dish with nonstick cooking spray.
- In a large bowl, combine the hot water and farfel.
- Add the sugar, apples and cinnamon.
- Fold in the egg whites.
- Add pineapple chunks and stir.
- Pour mixture into the prepared baking dish and dust the top with more cinnamon.
- Bake at 375° F for 45 minutes.
