Carrot-Apple Casserole

Serving size:           3/4 cup

Ingredients

  • 1 quart water
  • 6 large carrots, peeled and sliced (6 cups)
  • 4 large apples, peeled and sliced (6 cups)
  • 5 tablespoons all-purpose white flour
  • 2 tablespoons brown sugar
  • 1/2 teaspoon ground nutmeg
  • 1 tablespoon margarine, cut up
  • 1/2 cup apple or pineapple juice

Preparation

  1. Preheat oven to 350° F.
  2. Bring water to boil in a medium-sized pot. Boil carrots for 5 minutes or until tender. Drain.  
  3. Layer carrots and apples in a large casserole dish.
  4. Using a fork, mix flour, brown sugar and nutmeg in a small bowl.
  5. Sprinkle flour mixture over carrots and apples.
  6. Dot with margarine, then drizzle with juice.
  7. Bake for 30 minutes or until apples are tender.

Helpful hints

  • Casserole can be assembled ahead of time and refrigerated. Heat when ready to eat.
  • Replace brown sugar with Splenda® no calorie sweetener, if desired. Carbohydrate is reduced to 19 grams per serving and 1 Carbohydrate Choice.
