Cupid’s Cherry Cheesecake

Serving Size: 1/8 pie

Ingredients

  • two 8-ounce packages of cream cheese, softened
  • 2/3 cup sugar or Slpenda®granular no calorie sweetener
  • 1/2 teaspoon almond extract
  • 2 whole large eggs
  • 2 large egg white
  • one 9” ready-made graham cracker crust
  • 1 cup low-calorie cherry pie filling

Preparation

  1. Preheat oven to 300° F.
  2. Beat softened cream cheese, sugar and extract with an electric mixer on medium-high speed until well-blended. Add whole eggs and egg whites, one at a time.
  3. Pour into a ready-made graham cracker crust.
  4. Bake 55 minutes to 1 hour or until center is almost set.
  5. Refrigerate 4 hours or overnight.
  6. Cut into 8 wedges and top each piece with 2 tablespoons of low-calorie cherry pie filling.
