Lemon Squares

Recipe from "Kidney Kooking" cookbook from the National Kidney Foundation of Georgia

Yields 35 squares
Serving size 2 squares
Ingredients for crust
  • 1/4 cup confectioner's (powdered) sugar
  • 1/8 teaspoon salt
  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
Preparation for crust
  1. Mix together all ingredients in order listed.
  2. Pour into ungreased 8" square pan.
  3. Bake at 350 degrees for 15 minutes.
  4. Remove from oven and spread with the following filling mixture.

Ingredients for filling

  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 2 eggs slightly beaten
  • 2 tablespoons lemon juice
  • 1 tablespoon lemon rind (grated)

Preparation for filling

  1. Mix together all ingredients in order listed.
  2. Pour into 8" square pan you just removed from oven.
  3. Spread over top of crust.
  4. Return to oven and bake 20 minutes longer at 350 degrees.
  5. Remove from oven and cool.

Ingredients for icing

  • 2 tablespoons lemon juice
  • 3/4 cups confectioner's (powdered) sugar
  • 1 tablespoon unsalted butter (softened)
Preparation for icing
  1. Mix together all ingredients in order listed.
  2. When crust and filling layers are completely cool, spread icing over the top.
  3. Refrigerate. (These squares freeze well.)
