Apple Crepe

Serving size: 1 crepe with 1/4 cup apples, 1 tablespoon whipped topping
Ingredients
- 3 large apples (4 cups) peeled, cored and sliced
- 1/4 cup unsalted butter, melted
- 1 teaspoon cinnamon
- 2 tablespoons brown sugar (optional)
- 8 Basic Crepes
- 8 tablespoons nondairy whipped topping
Preparation
- Preheat oven to 350° F.
- Melt butter, pour over apples and toss to coat. Pour into an 8" baking dish.
- Sprinkle cinnamon and brown sugar over apples and stir.
- Bake 30 minutes or until apples are tender.
- Prepare Basic Crepe recipe on DaVita.com.
- Place crepe on plate, browned side down.
- Spoon 1/4-cup apple mixture onto crepe.
- Roll crepe and top with a tablespoon of nondairy whipped topping.
