Baked Fish ala’ Mushrooms

Serving size: 3 ounces

Ingredients

  • 1 pound fresh or frozen fish fillets
  • 2 tablespoons margarine
  • 1-1/2 cups fresh mushrooms, sliced
  • 1/4 cup white onion, chopped
  • 1 teaspoon dried thyme, crushed

Preparation

  1. Thaw fish, if frozen. Place fillets in a two-quart rectangular baking dish.
  2. Preheat oven to 450° F.
  3. Melt margarine in a small sauce pan. Add mushrooms and onion and cook over medium heat until tender.
  4. Spoon mushroom mixture over fish.
  5. Sprinkle with thyme.
  6. Bake uncovered in oven for 12 to 15 minutes or until fish flakes.

Helpful Hints

  • Try tilapia or cod. Any white fish will work in this recipe.
  • Thaw frozen fish in the refrigerator or under cold running water until fish is pliable.
  • One tablespoon fresh thyme is equivalent to one teaspoon dried thyme.
