Tasty Baked Fish

Serving size: 3-1/2 ounces
Ingredients
- 1 pound mild-flavored fish fillets (cod, catfish, perch or orange roughy)
- 2 tablespoons extra virgin olive oil
- 1/2 teaspoon ground cumin
- 1/2 teaspoon ground rosemary
- 1 teaspoon ground black pepper
Preparation
- Preheat oven to 350° F.
- Flatten fish fillets and turn several times in olive oil to coat completely.
- Sprinkle fish with spices.
- Place in baking dish.
- Bake for approximately 35 to 40 minutes in oven until fish flakes with a fork.

Helpful Hints
- Experiment with different fish flavors. Mild fish include orange roughy, perch, cod and catfish.
- To flatten fish, place wax paper over and under fish then apply pressure with a heavy, flat object such as a large cast iron skillet.
- Adjust portions for a lower or higher protein diet.
