Beef Tibbs

Diet - Dialysis, Diabetes

Serving size: about 1-1/2 cups

Ingredients

  • 1 small onion, sliced thin
  • 2 tablespoons canola oil
  • 8 ounces lean beef, cut into small cubes/pieces
  • 1 small or half a medium tomato, sliced
  • 1/2 medium bell pepper, or 1 whole fresh jalapeño pepper, if spicier taste is preferred.
  • 1/4 teaspoon salt
  • pinch of black pepper

Preparation

  1. Sauté onion and oil in a skillet until the onion is slightly brown.
  2.  Add beef and tomatoes.
  3. When partially cooked, add bell pepper or jalapeño pepper.
  4. Continue cooking until meat is tender.
  5. Add salt and pepper and serve.

  • Tibbs is a common Ethiopian dish that can be served with pita bread, half of a piece of injera or 1-cup cooked rice
  • Variations of Beef Tibbs can be prepared by adding different ingredients of your choice.
  • To make dish less spicy, remove seeds from jalapeño.
  • By using only a small portion of tomato, Beef Tibbs becomes an appropriate dish for dialysis patients.
  • Adjust the portion for a lower protein CKD-non-dialysis diet.
