Turkey Vegetable Chili

Serving size: 3/4 cup
Ingredients
- nonstick cooking spray
- 1 tablespoon canola or olive oil
- 1 pound lean ground turkey
- 1/2 cup onion, chopped
- 2 cloves fresh garlic, minced fine
- 2 cups zucchini squash, chopped
- one 14-ounce can stewed tomatoes, crushed
- 2 teaspoon chili powder
- 1-1/2 teaspoons cumin
- 1-1/2 teaspoons paprika
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon black pepper
Preparation
- Spray pan with cooking spray and add oil.
- Sauté ground turkey, onion, garlic and zucchini until zucchini is tender.
- Drain excess liquid well.
- Add stewed tomatoes and spices.
- Simmer covered for approximately 1/2 hour.
