Super Tuesday Shrimp

Portions:  4

Serving size: 3/4 cup 

Ingredients

  • 2 tablespoons minced onion
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup sun dried tomatoes in oil
  • 12 ounces shrimp
  • 8 ounces pea pods, frozen
  • 2 cups cooked pasta, drained
  • 1/4 cup feta cheese

Preparation

  1. Sauté onion and garlic in oil until lightly brown.
  2. Add sun dried tomatoes, shrimp and pea pods.
  3. Cook until shrimp change color (but pea pods remain crunchy).
  4. Mix shrimp and pasta.
  5. Sprinkle feta cheese on top and serve.
