Quick and Easy Ground Beef Soup

Serving size: 1-1/2 cups

Ingredients

  • 1 pound ground beef
  • 1/2 cup onion
  • 1 teaspoon Gravy Master®  seasoning and browning sauce
  • 1 cup reduced-sodium beef broth
  • 2 cups water
  • 1/3 cup rice
  • 3 cups frozen mixed vegetables (corn, lima beans, snap beans, peas and carrots)
  • 1 tablespoon sour cream (optional)

Preparation

  1. In a large saucepan, brown ground beef with chopped onions.  Drain fat.
  2. Add Gravy Master®, beef broth, water, rice and mixed vegetables.
  3. Bring to a boil on high heat.  Reduce to medium low heat, cover and cook 30 minutes.
  4. Remove from heat, stir in sour cream and serve.

Helpful hints

  • Look for reduced-sodium broth containing 500 milligrams sodium or less per 1 cup serving.  Avoid low-sodium broth that contains potassium chloride—it is very high in potassium.  Recommended brands include Health Valley® No Salt, Fat Free Chicken Broth (800-423-4846), Kitchen Basics® Natural Chicken Stock, and Swanson® 50% Less Sodium Chicken Broth .
  • Gravy Master® seasoning and browning sauce is produced by Gravy Master, Inc., 16 Business Park Drive, Branford, CT 06405. It is an acceptable low sodium, low potassium seasoning.
  • Optional vegetable mixture includes cauliflower, carrots and snow peas (reduces phosphorus to 190 milligrams per serving.)
