Macaroni Salad

 

Recipe from "Kidney Kooking" cookbook from the National Kidney Foundation of Georgia.

Servings 16
Serving size 1/2 cup
Ingredients
  • 3 cups cooked macaroni
  • 1/4 cup pimentos
  • 1/2 cup onion (chopped)
  • 1/2 cup green peppers (chopped)
  • 3 hard boiled, shelled eggs (chopped)
  • 1/2 cup mayonnaise
  • 1/2 cup celery (chopped)
  • 1 teaspoon mustard (regular dry)
  • paprika (sprinkle)
  • black pepper (sprinkle)
Preparation
  1. Cook macaroni, rinse under cold water and drain well.
  2. Combine all ingredients: macaroni, pimentos, onions, green pepper, eggs, mayonnaise, celery and mustard. Mix well.
  3. Sprinkle with paprika and black pepper.
  4. Chill and serve.

Suggestions: May omit mayonnaise and use oil and vinegar to lower sodium. May omit onions or celery and add green peas, cucumbers or parsley.
