Mexican Rice

Serving size: 1/2 cup

Ingredients

  • 1 cup white rice, uncooked
  • 1/4 cup canola oil
  • 1/4 cup onion, chopped
  • 1 clove garlic, chopped
  • 1/4 cup low-sodium tomato sauce
  • 3 cups water
  • 1/4 teaspoon salt (optional)

Preparation

  1. In a skillet, heat oil over medium-high heat. Add rice and cook until browned, stirring frequently.
  2. Add onion and garlic; sauté until tender.
  3. Add tomato sauce, water and salt.
  4. Cover and simmer about 20 minutes until water is absorbed.

Helpful Hints

  • Omit salt if regular tomato sauce is used instead of low sodium. The sodium content is about the same.
  • For best results, resist lifting lid from skillet when cooking rice cooking.

I would recommend using only 2 cups of water. This was much too watery & took a long time to cook out. Then you would be able to taste the other ingredients.

I was disappointed in this recipe -appeared to be bland, no spicy Mexican content - I don't think I'll be remaking this one. Sorry.
