Holushki Noodles and Cabbage

Recipe submitted by DaVita dietitian Cindy from Pennsylvania.

Portions: 7

Serving size: 1 cup

Ingredients

  • 8 cups cabbage, shredded (1/2 medium head)
  • 1-1/4 cups white onion, chopped into medium-sized pieces
  • 1/3 cup water
  • 8 ounces kluski noodles or wide egg noodles
  • 1/3 cup trans fat-free margarine or butter
  • fresh ground black pepper to taste

Preparation

  1. Place cabbage, onion and water in a large pan and steam over medium-low heat for an hour until tender. Stir frequently so cabbage does not stick. Add more water if needed.
  2. Cook noodles according to package directions, omitting salt. Drain well.
  3. When all liquid is evaporated from cabbage, add margarine or butter. Toss and continue to cook for 10 to 15 minutes.
  4. Season cabbage with black pepper.
  5. Add noodles to mixture and blend. Cook over low heat until hot.
