Sesame Vermicelli

Serving size: 1/2 cup

Ingredients

  • 1 tablespoon sesame oil
  • 2 tablespoons lemon juice
  • 2 tablespoons honey
  • 1 tablespoon vegetable oil
  • 1 clove garlic, chopped
  • 1/2 cup scallions, chopped, bulbs and green tops separated
  • 1/2 cup green peas
  • 3 cups cooked vermicelli

Preparation

  1. Mix together sesame oil, lemon juice and honey. Set aside.
  2. Sauté garlic and scallion bulbs in vegetable oil until slightly browned.
  3. In a large bowl, mix together peas, raw scallion tops and vermicelli. Add sautéed scallion bulbs and sesame oil mixture.
  4. Toss ingredients and serve.
