Lemonade Rice with Mixed Vegetables

Serving size  2/3 cup
Ingredients
  • 12 ounces lemonade
  • 1/2 cup water
  • 1 cup rice, uncooked
  • 2 tablespoons onion, minced
  • 1 cup frozen mixed vegetables (corn, lima beans, green beans, carrots, peas)   
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
Preparation
  1. Pour lemonade and water into rice cooker or saucepan and add rice, onion, mixed vegetables and black pepper. 
  2. Start rice cooker or cook on stove, covered, over medium heat for 20 minutes. 
  3. Sprinkle nutmeg and salt over rice and stir before serving.

Helpful hints

  • Fresh, frozen, bottled, canned or powdered lemonade may be used in this recipe. 
  • Be aware, some canned lemonades contain polyphosphate or phosphoric acid, a form of phosphorus.  Read labels and avoid brands with this additive.
  • Substitute your favorite low potassium frozen vegetable blend.
  • If you have diabetes, try sugar-free lemonade in this recipe to lower carbohydrates by 5 grams per serving.
  • For best results, do not remove cover or stir rice during cooking.
