Rotini Salad (low protein)

Serving size  1/2 cup
Ingredients
  • 2-1/2 cups cooked rotini pasta
  • 1-1/4 cups onion, chopped
  • 4 hard boiled eggs, chopped
  • 1 cucumber, diced
  • 1/2 teaspoon pepper

Salad dressing ingredients

  • 1/2 cup mayonnaise
  • 1/2 teaspoon black pepper
  • 1 tablespoon dry mustard
  • 1/3 teaspoon salt
  • 1 teaspoon prepared mustard
  • 1/2 cup sugar
  • 1/3 cup vinegar
Preparation
  1. Cook rotini according to directions on package. 
  2. Drain and rinse with cold water.
  3. In a large bowl, mix rotini, onion, eggs, cucumber and pepper. 
  4. Add homemade dressing and mix well. 
  5. Refrigerate to chill before serving.
