Bow-Tie Pasta Salad

Serving size 1/2 cup
Ingredients
  • 2 cups cooked bow-tie pasta
  • 1/4 cup chopped celery
  • 2 tablespoons chopped red bell pepper
  • 2 tablespoons shredded carrot
  • 2 tablespoons finely chopped purple onion
  • 1/8 teaspoon pepper
  • 1/2 cup mayonnaise
  • 1/2 teaspoon sugar
  • 1 tablespoon lemon juice
Preparation
  1. Mix pasta, celery, red bell pepper, carrot and purple onion in a bowl.
  2. In a separate small bowl, prepare dressing: blend pepper, mayonnaise, sugar and lemon juice until smooth.
  3. Pour dressing mixture over pasta and vegetables and mix until well coated.
  4. Chill and serve.
