Serving size: 1 cup
Ingredients
- 2 cups Uncle Ben’s® converted white rice, uncooked
- 2 cups onion, chopped
- 1 cup bell pepper, chopped
- 2 cloves garlic, chopped
- 1/2 teaspoon black pepper
- one 8-ounce can low-sodium tomato sauce
- 2 cups low-sodium beef broth
- 2 pounds raw shrimp, peeled
- 1 stick margarine or butter
Preparation
- Preheat oven to 350º F.
- In a large bowl combine all ingredients except margarine.
- Pour into a 9” x 13” baking dish and spread out evenly.
- Slice butter or margarine and place over top of ingredients.
- Cover with a lid or foil.
- Bake for 1 hour and 15 minutes. Serve hot.
