Fruited Curry Chicken Salad

Serving size: 1 cup

Ingredients

  • 4 skinless, boneless chicken breast halves, cooked and diced
  • 1 stalk celery, chopped
  • 1/2 cup onion, chopped
  • 1 small apple, peeled, cored and chopped
  • 1/4 cup seedless red grapes
  • 1/4 cup seedless green grapes
  • 1/2 cup canned water chestnuts, drained, chopped
  • 1/8 teaspoon ground black pepper
  • 1/2 teaspoon curry powder
  • 3/4 cup mayonnaise   

Preparation

  1. In a large salad bowl, combine the chicken, celery, onion, apple, grapes, water chestnuts, pepper, curry powder and mayonnaise.
  2. Toss all together.
  3. Serve immediately or chill for later.
