Fruit Salad Slaw

Serving size: 1/2 cup
Ingredients
- one 14-ounce can crushed pineapple
- 1/4 cup mayonnaise (Smart Balance®, or any regular or light mayo will work)
- 3 tablespoons pineapple juice
- 2 teaspoons sugar
- 1/2 cup cabbage, shredded
- 1 cup red apples, diced
- 1/4 cup carrots, grated
Preparation
- Drain crushed pineapple; reserve liquid.
- In a small bowl blend mayonnaise, 3 tablespoons of the reserved pineapple juice and sugar until smooth. Set aside.
- In a medium bowl combine cabbage, pineapple, apples and carrots.
- Add mayonnaise mixture and toss.
- Cover and refrigerate until chilled.
- Serve chilled.
