Creamy Cucumber Salad

Serving size: 1/2 cup 

Ingredients

  • 1 cucumber, thinly sliced
  • 1/3 cup sour cream
  • 2 tablespoons white vinegar or lemon juice
  • 1 tablespoon sugar (or artificial sweetener equivalent)
  • fresh ground pepper to taste
  • fresh chopped dill as garnish (optional)

Preparation

  1. Thinly slice cucumber.
  2. Mix together sour cream, vinegar (or lemon juice), sugar (or sweetener) and pepper.
  3. Combine mixture with cucumbers. Chill before serving.
  4. Garnish with fresh dill if desired.
