Crunchy High Protein Chicken Salad

Portions:  6

Serving size: 3/4 cup  

Ingredients

  • 1/2 cup light mayonnaise
  • 1/2 cup sour cream
  • 2 scoops EAS® 100% Whey Protein Powder (1 scoop = 23 gm protein)
  • 1/4 cup lime juice
  • 3 cups cubed, cooked chicken
  • 1 cup green apple, chopped
  • 1 cup green grapes, sliced (optional)
  • 1/2 cup red bell pepper, chopped
  • 1/4 cup red onion, diced
  • 2 tablespoons fresh cilantro, chopped

Preparation

  1. Mix mayonnaise, sour cream, protein powder and lime juice together.
  2. Add remaining ingredients, and stir until chicken is coated with dressing.
  3. Cover, refrigerate at least 2 hours until flavors mix.
  4. Serve on lettuce or on bread or crackers.

  • EAS 100% Whey Protein Powder is a whey protein available in many stores such as Costco® and Walmart®. If unavailable in your area, ask your dietitian for recommendations on other protein powder brands.

Delicious recipe if eaten immediately. The dressing waters down after it sits....but it's still delicious! I even added more crunch and chopped some celery into it. Reminds me of a "spa" salad. Thank you!
