Colorful Pasta Salad

Serving size: 1/2 cup
Ingredients
- 2 cups cooked bow-tie pasta (4 ounces uncooked)
- 2 tablespoons each red, orange and yellow bell pepper, chopped
- 3 tablespoons carrot, shredded
- 3 tablespoons red onion, chopped
- 3 tablespoons cucumber, chopped
- 1/8 teaspoon black pepper
- 2/3 cup mayonnaise
- 1/2 teaspoon sugar
- 1 tablespoon lemon juice
Preparation
- Cook pasta according to package instructions, without salt. Drain and rinse in cold water to cool. Place in a large bowl.
- Prepare vegetables and mix with pasta.
- In a small bowl, combine remaining ingredients with a whisk, then stir into pasta and vegetables.
- Chill for at least 1 hour before serving.

- To lower fat, use reduced-fat mayonnaise. Be aware that sodium content of many reduced-fat products is higher than the regular product.
