Lemon Curry Chicken Salad

Serving size: 1 cup

Ingredients

 

  • 1/4 cup oil
  • 4 tablespoons frozen lemonade concentrate (thawed)
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon curry powder
  • 1/8 teaspoon garlic powder
  • 1-1/2 cup cooked diced chicken breast
  • 1-1/2 cup green grapes (seedless, halved)
  • 1/2 cup celery, sliced

Preparation

 

  1. In a large bowl, combine oil, lemonade concentrate and spices.
  2. Add remaining ingredients and toss lightly.
  3. Chill and serve.
