It’s-Better-than-Potato Salad

Yield: 10 servings
Serving size: 1/2 cup
Ingredients
- 1 cup uncooked rice or salad pasta (elbow, mini shells, salad macaroni)
- 1-1/4 cups mayonnaise or salad dressing
- 2 cups celery, sliced
- 1 medium purple (sweet) onion, finely chopped
- 4 teaspoons prepared mustard
- 4 hard-cooked eggs, chopped
- 8 radishes, sliced
- 1 cucumber, pared and diced
Preparation
- Cook rice or pasta according to package directions without added salt. Refrigerate to chill.
- Add mayonnaise, celery, onion and mustard to chilled rice or pasta. Mix well and refrigerate until ready to serve.
- Stir in eggs, radish slices and cucumber before serving chilled salad.
