Roasted Red Pepper Tomato Sauce (reduced potassium sauce)

Ingredients
- 1/2 cup roasted red peppers (bottled or canned)
- 1/2 teaspoon minced garlic
- 1/2 cup tomato sauce, no salt added
- 2 tablespoons olive oil
- 1 teaspoon dried Italian seasonings
- 1/4 teaspoon red pepper chili flakes (if spicy desired)
Preparation
- Drain red peppers and measure 1/2 cup, (approximately 2 whole peppers).
- Place peppers and garlic in food processor or blender and process until smooth.
- Add tomato sauce, olive oil and Italian seasonings. Process until well blended. Ready to use on pizza, pasta or as a replacement for tomato sauce in recipes.
- May be refrigerated 2 to 3 days or frozen until ready to use.

My youngest son is now dialysis awaiting a transplant. He is a picky eater..imagine my surprise when he LOVED this ( not having anything marinara for over a year ) Now, he'll be able to have spaghetti or chicken parmesan once a week or maybe even pizza !!! THANK YOU !!!

I use one of those mini food processors that hold about a cup, use a couple of peppers and a couple of tbsp. of low-sodium tomato sauce and spices. This makes just enough for my portion while the rest of the family uses the rest of the jar of sauce. I've used it over spaghetti, stuffed shells, and veal patties to make veal parmesan. Thank you, Sara, for a delicious alternative for some of my favorite foods!
