Vegetable Casserole Delite

Serving size: 1 cup

Ingredients

  • 1/2 cup yellow summer squash
  • 1/2 cup salt-free canned green beans
  • 8 ounces All Whites® (egg substitute)
  • dash of pepper
  • sprinkle of paprika

Preparation for Microwave Oven

  1. Grease the bottom of a microwave dish.
  2. Arrange thin slices of squash and green beans around edge of dish.
  3. Pour in egg substitute.
  4. Sprinkle with pepper and paprika.
  5. Cook covered on high for 4 to 4-1/2 minutes, turning at least once.

Preparation for Stovetop

  1. Heat 1 teaspoon vegetable oil in a frying pan.
  2. Lightly sauté squash.
  3. Add green beans to pan.
  4. Add egg substitute and sprinkle with pepper and paprika.
  5. Cover with a lid and cook on medium heat until center is firm.
  6. Divide in half and serve hot.

Helpful Hints

  • Substitute squash and green beans with 1/2 cup asparagus, peas, corn, green or red peppers or onions. Turmeric may also be used in place of paprika.
  • Season with hot sauce if desired.
