Spicy Green Bean Salad

Serving size: 1/2 cup
Ingredients
- 1 pound green beans, fresh or frozen
- 1/4 teaspoon salt
- 2 tablespoons onion, finely chopped
- 1 ripe red Serrano chile, seeded and sliced
- 1/4 cup fresh cilantro, chopped
- 1 teaspoon dried oregano
- 3 tablespoons fresh lime juice
- 2 tablespoons olive oil
- 2 large hard cook egg whites, for garnish
Preparation
- Steam the green beans to desired doneness (5 to 10 minutes). Rinse with water to cool.
- Toss green beans with all remaining ingredients except egg whites.
- Serve chilled or at room temperature. Sprinkle egg whites on top shortly before serving.
