Helpful hints

  • If canned or jarred artichokes in water are used instead of frozen, look for the lowest sodium brand. Rinse well to help reduce sodium.
  • Try this dip on toasted slices of baguette, crisp celery or with your favorite low-sodium crackers.
  • Tabasco© sauce is one of the lowest sodium hot pepper sauces.

Made this for a kidney/diabetes challenged friend. Really good! Will make it again for my family regardless of the need to pay attention to salt and protein.

Fantastic! My father is a vegetarian, so I spread a few tablespoons of this on top of a portobello mushroom cap. He has 1/2 a cap with dip for a snack. And I eat the leftovers myself!

I made this for a family dinner. Everyone loved it. If I didn't tell them it was safe for my father to eat no one would have know it was dialysis recipe.

My husband loves this dish, makes him feel like he is cheating on his renal diet. I use this as a filling in the jumbo pasta shells and serve it with Italian Beef. yummy

This is a great dip--it has a great texture as well as taste. Not every store carries frozen artichokes, so read and compare the sodium content on the canned ones. This will be a dip that we will use again!
