Creamy Cucumber Spread

A DaVita dietitian from Alabama shares a light and refreshing appetizer that's perfect to beat the heat. Creamy Cucumber Spread will make your mouth water. It's kidney-friendly, easy to make and good for home or a picnic at the park or on the beach.

Portions: 16     Serving size: 2 tablespoons


  • 8 ounces cream cheese
  • 1 medium cucumber
  • 1 teaspoon onion
  • 1/4 teaspoon salt
  • 1 teaspoon mayonnaise
  • 1/8 teaspoon green food coloring


  1. Set cream cheese out to soften.
  2. Peel, seed and finely mince cucumber and set aside. Mince onion.
  3. Mix cream cheese, onion, salt, mayonnaise and green food coloring in a small bowl and blend until smooth.
  4. Fold cucumber into mixture until evenly blended.

Helpful hints

  • Analysis includes regular cream cheese. 1/3 less fat or fat-free cream cheese works great, too.
  • Creamy Cucumber Spread makes delightful finger sandwiches on white bread. Cut the crust off bread and cut sandwiches into triangles for fancy appetizers.
  • This recipe is good on low-salt saltine crackers too.
  • Recipe makes approximately 2 cups.

This is incredibly delicious. I tweaked it just a little. In addition to finely minced white onion and de-seeded, finely minced cucumber, I added a couple of tablespoons of finely minced pickled jalapeno pepper and carrot combination. Of course, I omitted the salt. Add about 1/2 teaspoon of Mrs. Dash table blend, sprinkle with paprika, refrigerate, and voila! This is a veggie spread that could grace any table.

This is really good. Cream and works good in a lot of different ways. I put the minced cucumber in a fine mesh strain and let some of the juice drip out and it is even creamier.

This sounds really good. I make something very similar to this. I slice the cucumber after peeling long way, and scrape out those pesky seeds. Then I slice it as thin as humanly possible. Then I squeeze the slices in a clean dish towel getting as much liquid out of them as I can. I omit the salt, in my humble opinion, it isn't needed, and add 1/4 tsp. of garlic powder instead. I also omit the mayo and use sour cream in it's place. Gives the whole dish a bit of zip. I've never used food coloring, but will the next time I make this. A pale green color sounds attractive!
