Made these for patients and it was mostly a hit, not as spicy as I thoguht it would be. Only surprise was how difficult it was to not squish them when cutting and that you always end up with some end pieces that aren't as pretty.

made these for Super Bowl...just used a tablespoon of canned chilies, used 1.5 Tablespoons of diced fresh jalapeño, and 1.5 Tablespoons of diced Red bell pepper...a pinch of smoked paprika and the garlic powder, omitted the cumin and chili powder...were gobbled UP with a little low sodium salsa on the side...

My administrator made these for a party. I enjoyed them but some of the teammates and patients felt they were a little too spicy.

I made the Fiesta Rollups for a recent Beach party in our dialysis unit (I am the dietitian). The first time I made them I followed the recipe but found the cumin and chili powder to be overpowering. The second time I replaced the cumin and chili powder with Spanish Smoked Paprika which added a delicious smoked flavor and a nice orange color to the filling. Also, instead of chopping up the scallion and adding to the filling, I placed one stalk of scallion on the edge of each tortilla before rolling it up...when they are sliced it makes a nice spot of green color in the middle of the pinwheels. These were popular with our dialysis patients.
